Understanding the Georgian Supra

Toasts, tamadas and the rules of the table.

A supra is more than a dinner: it is a sequence of toasts led by the tamada — to peace, to the family, to the dead, to friendship, to women, to children.

Only drink when a toast is made, never toast with beer, and if you are honoured with a toast, stand up and say a few words in return. Men often drink from a horn, the kantsi, which cannot be put down until it is empty.

Expect polyphonic songs, more food than seems possible and very late nights.
